Italian Cornflake Cookies

Instructions:
1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. Crush the cornflakes slightly by hand or using a rolling pin, so they are broken but not completely crushed.
3. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
4. Add the eggs, one at a time, and beat well after each addition. Stir in the vanilla extract.
5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
6. Gently fold in the crushed cornflakes, ensuring they are evenly distributed throughout the dough.
7. Take small portions of the dough and roll them into balls. Place the balls onto the prepared baking sheet, leaving some space between them as they will spread while baking.
8. Bake the cookies in the preheated oven for about 12-15 minutes or until they turn golden brown.
9. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
